Alright so you have the Kanji for Sun, and the Kanji for Book.
Since they're both Kanji side by side, you'll be using the on'yomi readings for both.
The on'yomi reading for 日 is にち
The on'yomi reading for 本 is ほん
So when you put them together, it becomes 日本 (にほん)which means Japan. Technically, both Kanji do follow the on'yomi/kun'yomi rules, is just that sometimes the sound changes or one of the characters is excluded. In my opinion, it's easier to remember that Nihon means Japan from the get go. The way I'm learning Kanji is that I'm given the most common vocabulary words containing the Kanji I'm learning and memorizing those rather than solely relying on applying the on'yomi/kun'yomi rules because of those exceptions.

@Hikari_511: There are no universal rules unfortunately. However, most of the time, if a word contains more than one Kanji, you use the on-yomi. Otherwise, it's kun-yomi. One exception to this rule is if one of the Kanji is a body part, and there are more... You just have to learn them I'm afraid!
