Creo que en la mayoría de los casos las expresiones son intercambiables entre sí. El cansancio viene por desgaste físico. Por ejemplo si has hecho deporte todo el día o has trabajado, te vas a sentir cansado y consecuentemente vas a tener sueño. Aunque hay casos en los que puede que estés cansado pero no tengas sueño o que tengas sueño sin estar cansado. Por lo general puedes usar cualquiera para referirte a lo mismo :)

(If you used "me cansan" in this sentence it would mean like those classes are exhausting)

Just like colombianbr said, cansado means being phisically exhausted while tener sueño just means being sleepy, feeling lazy.

Cansado mean physical and emotional exhausted. Sleep Is more related with physical or boring time.Is not the same, However you can use with same meaning sometime.

en "tengo mucho sueño" estas especificando y en "estoy muy cansada o cansado" no dices al porque

Estar cansado means to feel tired. Tener sueño means you actually want to sleep.
