falzen: very specific industrial term, you will most likely not use it in any "normal" situation
falten: to fold (make a smaller two layer object out of a flat material). It is also used when you create planes/折り紙/... from paper
knicken: to bend, to fold in order to create a certain "shape", for example carton boxes etc.
