I would like to know what you feel when you ask "How are you?" or "How are you doing?". What is difference from "Good morning(evening)" or "Hello"?

When I am said "How are you doing?", I always just reply "Good" or "Fine, thank you". And I've never asked them back, like "How about you?", "And you?", and so on. Is it better for me to ask them back?
