I’m studying for an English skill qualification. And there is a question in an English sentence.

Here is the sentence,
“Once they(microwaves) hit the food, they cause the molecules to vibrate rapidly, and this produces heat which then cooks the food.”
I just want to know why is “then” put next to “which”. Is it a grammar thing? I understood the sentence meaning but why does it need “then” in the sentence?
