Question about English (US)

In the phrase "I'm going to start posting photos here" why is "posting" and not "to post" or just "post"?
And more, on verbs in the infinitive, for example "to talk" and "talk" in the same sentence
"I want to talk to you" and "I want talk to you".
What's the difference between "to talk" and "talk"? If I use both sentences, is it okay anyway or does it change something?
