Question about Japanese

When I want to express something that I want to do, I add "ーたい" at the end of the verb stem, right? Like "リンゴを食べたい". Is this たい transforming the whole sentence in a い-adjective? I mean, if I want to say that I don't want to do something I add "-くない" that is used to negate い-adjectives
