"To call it quits" is simply a fancier and more emphatic way of saying "to quit".
I don't actually know what the origin of this expression is, but judging by its grammatical structure, I assume "quit" is a noun, and it's in plural here. However, there is no noun "quit" in modern English, if there ever was one.
Edit: Okay, the dictionary says "quits" is actually an adjective here. The meanings are:
on an equal footing; evennow we are quits
call it quits to agree to end a dispute, contest, etc, agreeing that honours are even
So the original meaning referred to settlement of a debt, and then it took on an additional meaning of abandoning or quitting something.
