Because I heard today someone order xxๅฎ้ฃ, but on the board, there was only ็ใๅใใใ

That's a good question for Japanese native speakers.
I have never though of it seriously.
We usually use ๅฎ้ฃ like ใใใใใใๅฎ้ฃใใใณใใผใฐๅฎ้ฃ and so on.
Basically, ๅฎ้ฃ means that we usually have rice, miso soup and meat , hamburg, fish. It depends on the ใ ๅฎ้ฃ.
On the other hand, ็ใๅใใ means that there are just the food.
For example, ใตใฉใใฎ็ใๅใใ means that there are some salads stuff like tomatoes, lettuce and so on.
ๅฎ้ฃ always has rice and miso soup.
