"Cubrir de" is only used with food, but "cubrir con" with all. For example:
-Voy a cubrir con chocolate el pastel
-Voy a cubrir de chocolate el pastel
(Both correct)
-Voy a cubrir al niño con la manta

(Only the first one correct)
