What does Why does 八百屋 means vegetable shop when kanji means 800 store?

I think it's a cultural thing. Here in Portugal we used to have a shop called "Loja dos 300" which literally means "300 store". This was where people used to get their groceries at considerably low prices. I think it's kind of the same thing with 八百屋

八百 has a meaning of "plenty of" "various of" in ancient Japanese. I guess that 八百屋 used to be not only the shop selling only vegetable but also be general merchants. ^^

八百屋の八百は確かに数字で「たくさん」を意味しています。
お店がたくさんあるという意味ではなく、お店に野菜や果物（昔はそれ以外のもの）など、たくさんの種類のものを置いてあったことが由来のようです。

日本語のサイトですが、ご参照ください。
"八百屋" の　"八百" は　"たくさん" という意味のようです。
昔、野菜のことを"青物"と呼んだとのこと、そこから野菜を売る店のことを"あおや"と呼んだのが、"やおや"に変化していったようです。

そこに"八百万(やおよろず)の神"のように、"たくさん"という意味で使われる"八百"を充てたわけですね。
