That’s a good one.... I can’t tell you exactly why but I wouldn’t say やすかったりきれいだったり. I think I’d usually use it with antonyms.
Ex)昨日はずっと寝たり起きたりしていたよ
And yes, you can use it with adjectives as well.
Ex)あのお店はご飯の量が多かったり少なかったりする
Ex)このごろ暑かったり寒かったりするね

Sure. the sentence would translate to something like “ I spent yesterday dozing off and on all day”
Sleeping and waking up would be the antonym
