“Les Français” embodies the French people (don’t forget the capital letter), “le français” is the language, “un Français” is a French person (with capital letter) and when you say/write “Il eat français”, français is an adjective here, so it doesn’t need a capital letter and it doesn’t strictly mean the nationality but more widely the origin of someone or something.
For instance :
Les Français aiment le pain. (French people love bread)
J’apprends le français. (I am learning French)
Le vin français est bon. (French wine is tasteful)
