i found this sentence. "Did she have a sandwich for lunch or "some" soup and salad?"
why is "some" used? I think "any" should be used if it is a question.

It is idiomatic.
.....some soup and salad.
You CAN also say:
a cup of soup and salad
a bowl of soup and salad
and you are right - you can say: Did she have ANY soup OR salad?
This is more straightforward language and there is no idiom, which is fine!

Both wouldn't be wrong.
I think it's because in the scenario you mentioned, the speaker knows that there are only 2 options that she could have had for lunch.
1) sandwich
2) soup and salad
So the speaker is assuming that if she chose the 2nd option, she would have drank 'some' soup.
If you ask "did you have any soup" = did you take any soup (whether little bit or a lot)
"did you have some soup" - - she can reply like "yes, I had some" Generally, 'some' implies not too much and not too little.
Unless the person has a big appetite, maybe that person's 'some' will be a lot
