It all depends on context.
All three variations work:
I do wrestling.
I wrestle.
I go to wrestling.
same goes for boxing, actually.
I do boxing.
I box.
I go to boxing.
It's more common to use the latter two since the word 'do' sometimes sounds awkward if not used properly in those sentences.
