Oke so I have a question about the way 존댓말 is written. Why is that in the last letter of the second syllable (댓) why is it ㅅ(s) and not ㄴ(n)?

you should study about korean a lot(about the principle of pronounce) to fully understand.
Actually 존댓말 is composed of 존대+말. while they combine, 사이시옷(a phenomenon that adds ㅅ(s) between the words) happens, so it is written like 존댓말. and due to the Phonological changes, ㅅ is pronounced like a ㄴ(n)
so the word '존댓말' is pronounced as '존댄말'.
