Like an e! Which means, it depends what comes after. In most words it's pronounced like "eu": œil (same pronounciation as the e in accueil), sœur. The only example I can think of where it's pronounced differently is Œdipe (pronounced "Édipe"), but most people say it wrong and say "Eudipe". x) So: to pronounce it, pretend it's an e!
