would be more understandable this way:
"Virginia comió pollo y no los camarones porque a ella no le gustan los mariscos".

Es totalmente correcto pero suena un poco "robótico"; está escrito de manera muy formal, poco natural con respecto a como hablan los nativos normalmente.
Yo diría algo como:
"Virginia comió pollo, no quiso comer los camarones porque no le gustan los mariscos."

it's ok sounds natural like a NATIVE but if you wanna say it formal use the first and 2nd answers but my opinion is really correct
