Both can be used. The only difference I would say that if you say " I would do a lot of projects" you always have to specify a time in the past (at college/when I was younger. Whereas with "I used to" can be used generally for recurring events in the past Without mentioning the past context. But also with I used to you often can mention the past context but the difference is that it is not always necessary. Espero que tiene sentado x
