Usually you use ill to describe long term or more serious diseases. You could say it's more formal.
And you can use 'I am sick' for when you have a cold or the flu*. We usually use it for less serious and short term diseases.
*Keep in mind that you can say that you're feeling sick, if you feel nauseous. For example, from food poisoning. Were it's not a disease but a temporary thing.
You can use either of them and still be correct.
