"Ich hoffe, Sie bald wieder in unserem Hotel zu sehen" ist auch richtig, aber "...begrüßen zu dürfen" ist höflicher und gebräuchlicher.
"Es war eine Ehre Sie hier zu haben" ist auch richtig. Würde ich persönlich aber eher bei berühmten Gästen verwenden.
