In a sentense like ( jump off of the stage ) i know that ( of ) is grammatically incorrect and unnecessary

"of" is grammatically correct and should be in that sentence. It is called a "preposition", and native speakers might leave it out and say "jump off the stage", but it is also correct to say "jump off of the stage".
