no I think "in this pandemic makes more sense than on"

"In this pandemic" is correct if the intended meaning is "during..." or "over the course of..."
"On this pandemic" generally does not sound natural, however it can make sense if the intended meaning is "on the topic of..."
Example: "On [the topic of] this pandemic, I think it's going to be something we will all remember for a very long time."
