it's foot, and it depends if you are just talking about one son or multiple sons.
so you have:
"My son should go to school on foot" (one son)
or
"My sons should go to school on foot" (two or more sons)
also note that while this is perfectly correct, it's more common to just say:
"My son/s should walk to school."
