There is a cooking style called "shallow frying", but for cooking fried rice it is just "fry"

It is simply "fry". To fry means to cook in a skillet with a little bit of oil. Maybe a cm. of oil on the bottom. To deep fry is to completely submerge in oil, like cooking french fries. The oil completely covers the food.
"I prefer chicken fried on top of the stove, not deep fried in a fat fryer."
