It basically means talking to someone about their life and what's new since the last time you've talked to them.

it has a decent amount of uses. its used to show that someone or something has been made up or done after a long time.
specifically when "catching up" with a person your talking about that persons life and what new things have happened in their life.
When taking about an action that needs to be done, you can catch up with it. like "cathcing up" with chores or homework means doing something you needed to do but previously didn't or couldn't do.

yep. thats how it would be used.
it sounds more natural to say
we need to catch up on all this work.
I just added the word on because it helps signifying what will be caught up, but yeah thats how you use it.
