Personally it sounds like âdidnât quite catch thatâ sounds like you heard what the other person said, but missed parts of the conversation. âcouldnât quite catch thatâ sounds like you knew they were talking but due to something you missed the entire conversation.
Youâd be understood both ways though if youâre trying to get someone to repeat something.

They both mean pretty much the exact same thing. One person may prefer to say: "I didn't quite catch that" While another may prefer: "I couldn't quite catch that"
You could argue over there being a micro-difference in the two sentences, but it is very common in English for different people to have different and their own preferred ways of phrasing things.
