You can use that, but more people would say “I like playing tennis” or “Tennis is enjoyable” or “I find tennis enjoyable”

You would say “I enjoy playing tennis” when using the progressive tense we don’t use the infinitive form of a verb, it’s conjugated so it drops the “to”

‘To play’ is the base verb, once you change it to playing you drop ‘to’. You can say ‘I like to play tennis’ or ‘I enjoy playing tennis’
