Commit something to memory = fancy way of saying 'memorize'. Someone arrogant or intellectual may speak like this.

It's the same thing !! But "memorize sth" is more commonly used. And "commit sth to memory" sounds like you're really emphasizing something because it's very important.
1) I memorized his phone number.
2) I committed the definition to memory because I know that it will be in the test!
3) Did you memorize the poem yet?
4) Commit that pattern to your memory because if you don't remember it, we will all die!
