In America, recess usually means the period of time when elementary school students go outside to the playground to play.
I think you might be looking for the word “break”. Lots of universities and high schools have things such as “spring break” which can be days or weeks off of school. Here’s some example sentences:

“It’s 1 week long for my school”
“My university is going on break for Christmas, we have 3 weeks off of school.”

@deeo22 Thank you, We use the same word for all the students in Brazil, in case we talk "Recesso" in all situations, but we also have a childish word for "recesso", it's called "recreio".
