When people make a statement, then add on 'you know', it basically means 'I'm telling you this and you should believe me that it's true.' It's sort of a way to assist in convincing someone of something.
A: I'm not going to see 'Parasite'.
B: Really? It's an incredible movie, you know...
A: Oh, really? I didn't realize. I guess I'll go see it.
If you add on 'as you know' that is implying that you know that they know something already.
A: What will you eat for breakfast?
B: As you know, I'm going low carb, so probably just eggs. (A knew about B's low carb diet from previous conversation.)

@Annie_James “you know”=“don’t you know?” (I think you should feel the same way) “as you know”= “I think that you already know this/agree with this” (It could be used to subtly suggest that they agree/learn about it!)
