"Spit in the face" = spitting in anger, upset, with aggression.
"He spits on the floor" = he just spits on the floor

spit on the face = could either mean "there is some spit on the face" or a command to "launch spit from one mouth to a different face"
spit in the face = only means to "launch spit from one mouth to a different face"

@Strange_cat there is no difference between the two. :) it is more grammatically correct in English to say “spit on (my,his,her) face”, but here in America, it is common to say grammatically incorrect sayings such as “spit in” instead of “spit on”.
The word “the” is only for expressing an object or title. A ‘face’ isn’t an object, rather it is a body part of a human being, ^_^ so it is best to write pronouns instead of “the”.
Unless you mean “spit on the face” and “the” is referring to the face of an object. Like... the face of a statue. :)
As for using ‘spit “in” the face’ it is commonly used here in America , but it’s not proper English. Using “spit in the face” would mean, spit INSIDE the face, which probably isn’t possible. 😁
