If you want to say that he doesn’t normally show off, but this time he did show off, and it was shocking/surprising to you, then you can use “surprised.”
If you are trying to say that he is showing off and it is bothering you / annoying you / you don’t like it, you can just say “your showing off is annoying me” or “I’m annoyed by your showing off” or “it’s annoying when you show off” or “I don’t like it when you show off”
You cannot use “display” to mean “showing off.” “To display” means to show something to another person or to put it in a place where many people can see. “To show off” means to brag or to try and get attention for something about yourself (your clothes, knowledge, money, talents, skills, abilities, etc).

for the majority of the English verbs you can change them into nouns by adding ing
e.g.
to dance > dancing
to sing > singing

it means the same as showing off. When you want to use showing off as a normal noun it'd be better to use flexing
