It's complicated question up to Spanish speakers. In theory both are the same, we use to actions who you wanted to do in the past. However quise is used in to specific period of time or an event, while quería is not specific. It's more common to use quería. So, if you use quería instead of quise sounds natural.
_ En aquel momento quise/ quería ser piloto.
_ En aquel momento supe que quería ser piloto.
In the first sentence could be changed quise but in the second one only can use quería.
Also quería is used to first and third person, quise only for first.
_Yo quería/ quise viajar.
_El quería/ quiso ir a Toronto.

It is when something happened instantly. For example:
- quería ser enfermera. I wanted to be a nurse.
- quise ser enfermera. (And in that moment) I wanted to be a nurse.
