"Out for the count" was originally a phrase from boxing. When a fighter was knocked down, the referee would count for 10 seconds. If the fighter could not stand up after 10 seconds, they were "out for the count", and couldn't continue.
That tombstone is a pun: the woman's surname is 'Count' and she is dead (so can't continue in life). So Miss Count is... out for the count.
(It's not a really clever joke, but for a tombstone it's not too bad... 😉)

Out for the count is a boxing term. It means the boxer was taken out (or killed). Whoever paid for this tombstone thought it was funny making a pun out of her last name, which is count. It's a bad joke.
