@maru0 the “and a” separates the lasagna from the spinach salad. With out the “and a” it would mean you want a lasagna spinach salad all together instead of two separate dishes.

You could also say "I'll have the spinach salad." I don't think there is much of a difference.

@maru0 yes, in this sentence I don't think it matters whether you use "a" or "the"
