1. There are friends of mine who had been living in the US, whom all said the people there generally like women whose hips are rather big.

The second one is better but you would say it like this: There are friends of mine who lived in the US, they all said the people there generally like women whose hips are bigger.

Some friends of mine who had been living in the US, have said that the people there generally prefer women whose hips are rather big.

#1 You can use both "Had been living" or "Lived" and they mean the same thing.
