The difference is that the first one talks in future tense, so you are saying this is what we would do when we are going to Scotland. The 2nd one is in past tense because your telling people what you did after going to Scotland

(This is suggesting to the readers that you are speaking in past tense. As if you are telling a story that already happened)

(This sentence is suggesting present tense vocabulary, meaning you are going to the Highlands right now)

If you said “will” that’s future tense.
