The difference is that the first one talks in future tense, so you are saying this is what we would do when we are going to Scotland. The 2nd one is in past tense because your telling people what you did after going to Scotland

@Anth22 The use of the word “would” shows a past and future tense because your saying this is something that you will/did do either in the past or future depending on the context. The word “would” can be a little complicated.
