I would use the first for cursive and the second for printing. I haven't written cursive since I was in school, so really just the second one.

I often write "I" with a line on top and bottom.

@LearningStar I think any style is ok for a formal letter as long as it is clear, readable, and consistent.

@LearningStar Yes, you can use the version with two lines. That's how we're usually taught in school for uppercase i. When the printing press was invented. Individual letters cost a lot of money. So they used lowercase L as the uppercase i. It became common after that.
