Caleb is correct. I just want to add that you are questioning your own worth when saying this. “What am I, chopped liver?” Is the same as saying What am I, useless?” or “What am I, worthless.”
This can used if you feel ignored or mistreated by someone else.
I don’t hear this term used much in everyday life.
