En inglés, en conversaciones cotidianas es muy común decir “was like” en vez de “dije/dijo.” Por ejemplo, podría decir, “And then Sarah was like [i.e., Sarah said], ‘I want to go to that restaurant instead.’” Hay una frase/palabra que se usa así en español?

No, we don't have a expression like that. You just say "dijo", it's the most common.
Sometimes, in the North of Mexico the people can say "y Sarah estaba asi como 'mejor vamos al restaurante'" but is really informal and isn't very common in the rest of the country.

Es más común decirlo entre amigos, cuando contamos alguna historia o experiencia de tiempo relativamente corto
(la reunión anterior, la fiesta de anoche, alguna salida de la semana pasada, o puede ser algo chistoso que hizo o dijo alguien).
Entonces; estás con tus amigos y estás contando lo sucedido, y entonces dices: "estaba la maestra hablando (o la jefa) y entonces ella no aguantaba la risa y estaba como", (entonces imitas el gesto o la referencia).
Eso en pasado, en presente you say "es como" / "es como de" (sobre alguna situacion), (entonces imitas el gesto o la referencia).
sobre alguna persona en presente (he/she was like but let's say in present),
you saw something funny or someone and you say that person are being like (something),
you can say
"él está así de" (entonces imitas el gesto o la referencia).
