'splatter' is more 'droplets' and 'splat' is more 'solid':
splattered: paint on a shirt
splatted: a dead cat on the road

*the cake is splatted in yhe middle of the road.

1 sounds OK and is correct, 'splatted' is rarely used though. 'splat' is more common as in 'I dropped the cake and it went splat all over the floor' or 'what is that splat on the window? Oh, that's the dead body of a bird that flew into the glass'.
2 sounds strange because cake is relatively solid, splattered would be Paint, Flour, Water etc.
