Question about English (US)

This is a part of the article in New York Times May 12.

It’s about why people have and feed their pets and when and how it started.

In this section “she” is Dr.Sykes, who is an archaeologist at university and researching this issue.

So I have a question.
In this picture, the first sentence in the paragraph starting from”And, she said,~” is ununderstandable for me.
Especially “we’re going to domesticate animals” is.
I suppose this is connected with “way back when” in line 2. But it doesn’t make sense.

I appreciate if you answer this question.
