@raining211 Both are natural, however the first sentence just means that whoever loves late-night snacks not only can’t help it, but also shouldn’t be doing it.

@raining211 If you are talking about yourself both sentences should begin with I, not you. If you are talking about someone else you should say “I know you shouldn’t, but you can’t help it.” “I know you can’t help it.”
they convey slightly different meanings. The first says you are both aware you like late night snacks and shouldn’t, but are unable to or unwilling to change the behavior. The second only says you are aware you like late night snacks and are unwilling to change the behavior.
Also no reason to have / in the sentences.
