All of them.
Most insects, when they "bite" you, are actually stabbing you. But we don't say this. We use all of the words that you have experimented with. Bite, sting - doesn't matter. People will easily understand what you mean.

Like isthmus_x said, all of them are correct. However, insect sounds a bit awkward in this context, so I'd rather say the word "bug" instead of "insect" in this case.

Although interchangeable for the most part, if you want to be specific:
Any kind of mosquitoes, bees, scorpions we typically say 'stung'.
(I hope I'm not forgetting any other stinging types).
Every other kind of creepy crawly would be safe to say 'bitten'.
