Can I ask you some questions? 😊

Actually I am reading a fiction book with my son, but sometimes the book refers to the water in the lake as ‘water’, but othertimes refers to it as ‘waters’. Can you tell me when I will have to use ‘water’ and when ‘waters’

For example,
“The icy wild waters swirled around them.” (waters)

“The icy water swirled up to his knees.” (water)
