They both work, they only differ a little in meaning.
You say: "I'll go out for lunch." when you will be leaving to go and get lunch as in the meal. In other words, you are going to get food.
You say: "I'll go out to lunch." when you will be leaving to go to lunch as in the event. When saying it this way it usually implies that you will be dining with other people.

@dhyanado If you want to make it a bit more natural, when you are about to leave you’d say, “I’m going out for lunch” rather than “I’ll go.” “I’m going out to lunch.”
