Question about English (US)

What is the difference between Could you give me a while? and Could you give me a second? ?Feel free to just provide example sentences.

When I go to the restaurant (in US), normally I need some time to choose the dishes. So I need some time and want the server to wait me for a while till I select it. Is it okay to say that?

(+Just extra Q, is it weird to choose the dishes within 5m? Some restaurant's server kept coming and asking me "are you ready to order." As a foreigner, I'm a bit perplexed. Anyhow hope someone let me know the details.
