No, you wouldn't use "stretch" here.
"Can I get a drink? You know what, make that two; he's gonna drink with me."

No. You wouldn't use "stretch" to mean that you want more than one of something.
You might use "stretch" if you made a soup for two people, but then another person shows up. Now you have to "stretch" the soup to feed three people instead of two.
Think about what stretch means: you take one thing and pull on it to make it bigger. It doesn't mean to duplicate it.
If you say "can you invite me to a drink?" that means you want the other person to ask you if you want a drink. I suppose you might do that, but I don't think that's what you meant.
So:
"Can I invite you out for a drink?"
"Sure, but let's make it two!"
