I can’t understand the difference in meaning and nuance between
“His fortune evaporated overnight.”
and
“His property evaporated overnight.”

"His fortune" means his money, his wealth.
"His property" means the land and buildings he owns. It's a little odd to say it "evaporated" though, since land can't evaporate.
